This is a rich tasting easy to make loaf. A family favourite in my house.
1/2 cup unsweetened applesauce
1/3 cup boiling water
2 Tblsp water
1 cup pumpkin puree
2 tsp vanilla
1 cup pressed dates
1/3 cup cocoa powder
1 1/2 cups whole wheat flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves
3/4 tsp baking soda
1/2 tsp salt
1/2 cup raisins
Preheat oven to 350 F
Combine all wet ingredients in a high speed blender.
Combine all dry ingredients in a bowl and mix well
Combine the two bowls. Mix carefully. The batter will be thick.
Add raisins if using.
Spoon into a parchment lined loaf pan.
Bake for about 55 minutes to an hour or until a toothpick inserted into the center comes out clean.
Remove from oven to a cooling rack.
Carefully grabbing the parchment, remove from pan and set on cooling.
Let cool completely. Remove parchment.
